Verdant Viper Cocktail

Watch out for this one! The Verdant Viper Cocktail is one of those innocuous, healthy-looking drinks that will knock you on your… bottom! It does, however, contain lots of vitamins and goodness – so several are recommended to get the full effect!

A healthy drink that packs a punch

Verdant Viper Cocktail

Makes 1 jug. Serves 4

  • 1 litre of fresh pineapple juice (easily found or freshly extracted in this part of the world)
  • 6 oz fresh-squeezed lime juice
  • 8 oz white tequila (we like Don Julio)
  • 2 oz jarabe or sweetener (optional)
  • 1 small cucumber (skinned and de-seeded)
  • Handful of washed mint leaves
  • 4 pieces of fresh pineapple for decoration
  • 2 oz coconut milk or cream of coconut
  • 2 oz fresh pineapple juice

Put a glass drinks jug in the freezer to cool.
Prepare the drink in a plastic jug.
Roughly cut cucumber and put into a blender.
Add mint leaves and pulse several times to “muddle” leaves with cucumber pieces.
Place in a plastic jug.
Add tequila and jarabe (if needed).
Mix and leave to sit for 10-15 minutes at room temperature.
Add pineapple and lemon juices.
Take glass jug out of the freezer.
Add ice cubes to the chilled glass jug and pour drink over ice.
The drink can be chilled in the glass jug for an hour or so.

To serve

Take 4 tall old-fashioned glasses and fill with ice cubes.
Pour in chilled drink and garnish with a fresh piece of pineapple.
Drink quickly and often.
